Start with 1 kg of black-eyed peas (feijão fradinho).

Place the black-eyed peas in a food processor to break them up slightly.

Transfer the broken peas to a bowl and cover them with water to soak overnight.

As the peas soak, the skins will float to the top. Use a strainer to remove the skins.

Continue adding water and straining until all the skins are removed, leaving only the clean peas.

After soaking overnight, the peas should be clean and free of skins, with some small black spots remaining.

If you don't want to soak overnight, you can soak the peas for at least 4 hours instead.

Once cleaned, drain the peas well.

Process the cleaned peas in the food processor until they form a smooth dough-like consistency.

If you want to freeze the Acarajé dough, place it in a freezer bag, remove the air, and freeze it. To thaw, move it to the refrigerator the night before you plan to use it.
