Peel, core, and slice 7 medium Granny Smith apples.

Add 60 grams of cinnamon and 2 grams of cardamom to the apples.

In a saucepan, melt 115 grams of butter.

Add 45 grams of all-purpose flour to the melted butter and mix to create a roux.

Add 200 grams of sugar and 70 ml of water to the roux and bring to a boil for 3-4 minutes until the sauce is thick and transparent.

Remove the sauce from heat and let it sit for 2-3 minutes before pouring it over the sliced apples. Mix well to ensure the apples absorb the sauce.

In a mixing bowl, combine 350 grams of flour, 3 grams of salt, 225 grams of butter, and 15 grams of sugar.

Add 50 ml of cold ice water to the mixture and combine until the dough forms. Do not overmix.

Cover the dough and refrigerate for at least 1 hour.

Roll out the dough into a round shape for the tart mold.

Place the rolled dough into the mold without cutting it right away to prevent shrinking. Use scissors to cut the dough 3 cm higher than the mold.
