Teriyaki Shrimp Kabobs

Cultural Context

Teriyaki, meaning 'to grill' or 'to broil' in Japanese, has its roots in traditional Japanese cooking. It typically features a glaze made from soy sauce, mirin, and sugar, imparting a sweet and savory flavor that complements grilled meats and seafood beautifully. Teriyaki shrimp kabobs are a popular dish at summer barbecues and family gatherings, showcasing the vibrant flavors of fresh vegetables and succulent shrimp. Today, teriyaki has transcended its origins, inspiring variations worldwide, often adapted to local tastes and available ingredients.

teriyaki sauce

🥗Healthier: low-sodium soy sauce

💰Cheaper: soy sauce + honey

Low-sodium soy sauce reduces sodium content while maintaining flavor.

pineapple

🥗Healthier: mango

💰Cheaper: canned pineapple

Canned pineapple is often less expensive and has a longer shelf life.

1

Start by making garlic rice. Chop 5 cloves of garlic.

2

In a pan preheated on high heat, add 1 tablespoon of Kerrygold butter and the chopped garlic. Cook for 30 to 40 seconds to season the butter.

3

Add 2 and 1/2 cups of rinsed rice to the pan and cook for 2 to 3 minutes, stirring to combine with the garlic and butter.

4

Transfer the rice to a rice cooker. For every cup of rice, add 1 cup of water and 1/2 teaspoon of Himalayan pink salt. Start the rice cooker.

5

Soak wooden skewers in water for about an hour to prevent burning.

6

Chop yellow squash, zucchini, orange bell pepper, red bell pepper, red onion, and pineapple into bite-sized pieces.

7

Assemble the kabobs using the shrimp and chopped vegetables.

8

Marinate the shrimp in 1 cup of teriyaki stir-fry sauce, 1 teaspoon of black pepper, and 1/2 teaspoon of ginger. Brush the marinade on top of the shrimp kabobs.

9

Preheat a grill pan and spray with olive oil. Sear the kabobs for about 1 minute on each side to get some color.

10

Transfer the kabobs to the oven and bake at 400 degrees for 10 to 15 minutes, checking to avoid overcooking the shrimp.

11

Remove the kabobs from the oven and top with sesame seeds before serving.
