Today's dish is inspired by the Puerto Rican dish, bakalao, but we're using fresh largemouth bass fillets instead of salted cod.

Prepare to cook rice by boiling 1.5 cups of water in a Campmade number eight pot.

Add 3/4 cup of rice and 1/2 teaspoon of salt to the boiling water, stir, cover, and cook for 20 minutes.

For the sofrito, gather diced tomatoes with green chilies, chopped cilantro, fresh garlic, onions, and capers.

Heat a Dutch oven for deep frying while keeping an eye on the rice.
