1

Wrap each boneless country style rib with 2 strips of bacon.

2

Sprinkle Bob's Southern smoking barbecue rib rub on top of the bacon.

3

Prepare the Weber Go Anywhere charcoal grill for indirect cooking with charcoal on one side and an 8x8 aluminum pan on the other side.

4

Light the charcoal using 2 lighter cubes and place the grill grate over the pan.

5

Close the lid with the vent over the charcoal side closed and the vent on the other side open to allow heat and smoke to circulate over the ribs.

6

After about 1 hour, check the ribs; the grill temperature should be around 250°F.

7

After 1.5 hours, check the browning of the ribs and ensure they reach an internal temperature of around 145°F to 160°F.

8

Apply Bob's Southern barbecue sauce on the ribs and let it set for about 5 minutes before removing from the grill.
