Heat olive oil in a large pot over medium heat until shimmering
Add chopped onions and garlic; sauté until translucent, about 5 minutes
Add beef chunks and brown on all sides, about 10 minutes
Stir in chopped tomatoes, bay leaves, cinnamon, and cloves
Season with salt and black pepper to taste
Pour in enough water to cover the meat; bring to a simmer
Reduce heat to low and cover; cook for 6-8 hours until beef is tender
Remove the beef and shred it using two forks; set aside
Strain the cooking liquid, discarding solids, and return liquid to pot
Stir in cassava flour to thicken the sauce; cook for 10-15 minutes
Return shredded beef to the pot; mix well to combine
Serve hot, garnished with cilantro and lime, alongside rice
