Ground turkey is leaner, while ground chicken is often cheaper.
Finely mince 1/2 onion and 2 cloves of garlic.
In a bowl, combine 1 pound of ground beef, minced onion, minced garlic, 1/2 bunch of finely chopped parsley, and 1 teaspoon of salt.
Mix the ingredients together until well combined.
Shape the mixture into patties, using a melon baller for uniformity if desired.
Slice 2-3 potatoes into wedges and season with 1 tablespoon of olive oil, 1 teaspoon of paprika, and salt.
Chop 2 tomatoes and season them with olive oil and salt.
Arrange the shaped patties in a baking dish and layer the potatoes and tomatoes around them.
Preheat the oven to 400°F and bake for about 45 minutes, checking that the potatoes are cooked through.
Prepare the tahini sauce by mixing 1/4 cup of tahini, juice of 1/2 lemon, 1 clove of minced garlic, and 1/2 cup of water until smooth.
10 minutes before the dish is done, pour the tahini sauce over the patties and vegetables in the baking dish.
Add extra parsley for garnish before serving.
