Preheat the oven to 180°C (350°F).
Cream together butter and sugar in a mixing bowl until light and fluffy.
Add the egg and mix until well combined.
Sift together flour, baking powder, and salt in a separate bowl.
Gradually add the dry ingredients to the butter mixture, mixing until a dough forms.
Stir in vanilla extract and lemon zest until evenly distributed.
Wrap the dough in plastic wrap and refrigerate for 30 minutes.
Roll out the chilled dough on a floured surface to about 5mm thick.
Cut out shapes using cookie cutters and place them on a baking sheet lined with parchment paper.
Bake in the preheated oven for 10-12 minutes until lightly golden.
Remove from the oven and let cool on a wire rack.
Optional: Decorate with icing or sugar after cooling.
