Cut the chicken thighs into a fan shape and wash them clean.

Prepare the marinade ingredients: garlic, shallots, turmeric, coriander, pepper, ginger, salt, MSG, and 1 egg.

Blend the marinade ingredients until smooth, adding a little water if needed.

Marinate the chicken with the blended spices. If not cooking immediately, store in the fridge or freezer for better absorption.

Coat the marinated chicken with flour (using seasoned flour if available).

Heat oil in a frying pan and fry the chicken until golden brown and cooked through, flipping occasionally to ensure even cooking.

Prepare sambal by blending shallots, garlic, and cayenne pepper. You can either fry or boil the sambal ingredients.

Add sugar, salt, and MSG to the sambal mixture and blend until slightly coarse, then cook to prevent spoilage.

Once the chicken is cooked, serve it with sambal and fresh vegetables like cucumber or lettuce.
