Wash and chop 250 grams of mixed beans into small pieces.

Heat half a tablespoon of refined oil in a pan.

Add the chopped beans to the hot oil along with salt and half a teaspoon of turmeric powder; fry well.

Transfer the fried beans to a plate.

In the same pan, heat one teaspoon of mustard oil.

Add half a teaspoon of cumin seeds and a quarter teaspoon of mustard seeds; fry for a few seconds.

Add one medium-sized sliced onion and fry until golden brown.

Stir in one teaspoon of garlic paste and one teaspoon of ginger paste; fry well.

Add the previously fried beans back into the pan and mix thoroughly.

Add one teaspoon of salt, one teaspoon of turmeric powder, one teaspoon of red chili powder, half a teaspoon of coriander powder, and half a teaspoon of cumin powder; mix well on low flame for 6 minutes.

Once mixed, add enough hot water to cover the mixture and bring to a boil.

Add the chopped brinjal (eggplant) and cover the pan; cook on low flame until the beans are soft.

Check if the beans are cooked well; if needed, adjust salt and mix again.

Cover and cook on low flame for another 3-4 minutes.

Stir without the lid to dry out the mixture slightly if desired.

Dish out the beans ki sabji and serve hot with rice or roti.
