Ghee adds richness while butter is often less expensive.
Rinse moong dal under cold water until water runs clear.
Soak moong dal in water for 30 minutes, then drain.
Heat cooking oil in a pan over medium heat until shimmering.
Add cumin seeds and sauté until they begin to crackle, about 30 seconds.
Add chopped onions and cook until they turn translucent, about 3-4 minutes.
Stir in ginger and green chili, cooking for another minute until fragrant.
Add drained moong dal and stir to coat with oil and spices.
Sprinkle turmeric powder, coriander powder, and salt, mixing well.
Pour in a cup of water and bring to a boil, then reduce heat to low.
Cover and simmer for 15-20 minutes until dal is tender and water is absorbed.
Stir in garam masala and cook uncovered for an additional 2-3 minutes.
Garnish with fresh coriander leaves and a squeeze of lemon juice before serving.
