1¼ cups split skinless green gram (dhuli moong dal), soaked for 30 minutes and drained
Salt to taste
½ teaspoon turmeric powder
3 tablespoons oil
½ teaspoon cumin seeds
A pinch of asafoetida
2 one-inch ginger pieces, chopped
1 green chilli, chopped
1 teaspoon red chilli powder
2 teaspoons lemon juice
1 tablespoon chopped fresh coriander leaves + for garnish

Take dal in a deep non-stick pan, add 2½ cups water, salt and turmeric powder and cook till just cooked but not mashed. Drain excess water.

Heat oil in a non-stick kadai. Add cumin seeds and asafoetida. Once the cumin seeds start to change colour, add ginger and green chilli and sauté for ½ minute.

Add red chilli powder and the cooked dal and mix till well combined. Add lemon juice and salt if required. Mix lightly taking care not to mash the dal and cook till dry.

Add coriander leaves and mix.

Serve hot garnished with coriander leaves.
