4 medium potatoes, peeled and cubed
2 medium onions, finely sliced
2 medium tomatoes, chopped
2 green chilies, slit
1/2 cup mustard oil
1 tsp cumin seeds
1 tsp turmeric powder
1 tsp red chili powder
1 tsp coriander powder
1/2 tsp garam masala
Salt to taste
Fresh coriander leaves for garnish

Heat mustard oil in a pan until it starts to smoke, then reduce the heat.

Add cumin seeds and let them splutter.

Add sliced onions and sauté until golden brown.

Stir in the chopped tomatoes and cook until they soften.

Add turmeric powder, red chili powder, coriander powder, and salt; mix well.

Add the cubed potatoes and green chilies; stir to coat the potatoes with the spices.

Cover and cook on low heat for about 15-20 minutes, stirring occasionally, until the potatoes are tender.

Once the potatoes are cooked, sprinkle garam masala and mix gently.
