Cultural Context

Condensed Milk Bread has its roots in the Philippines, where it is cherished for its soft texture and sweet flavor, often enjoyed as a breakfast item or snack. The use of condensed milk reflects the influence of American baking practices during the colonial period. Today, it is a beloved treat in many households, often served with butter or jam, and has inspired variations across different cultures, making it a delightful addition to any table.

1

In a small bowl, combine the yeast and a tablespoon of warm water. Let it sit for about 5-10 minutes until it becomes frothy.

2

In a separate bowl, whisk together the egg and sweetened condensed milk until well combined. Add the yeast mixture and salt, and mix.

3

Gradually add the milk and bread flour to the wet ingredients while stirring. Continue to mix until a shaggy dough forms.

4

Knead the dough and let it rest for 20 minutes.

5

Flatten the dough a little, put butter in the middle and knead it into the dough until it’s smooth, elastic and no longer sticky. This may take about 10 minutes.

6

Round the dough and place it in a bowl, cover it with a damp cloth or cling wrap and let it rise in a warm place for about 1 hour.

7

Deflate the dough to remove air bubbles, flatten it a little and divide it into 6 parts.

8

Round each dough and let them rest again for 30 minutes.

9

Flatten the dough, roll it out with a rolling pin. Make a rectangle shape, flatten one side and start rolling up from the opposite side.

10

Now that you have a long strip of dough, place it in the 8 inch lightly greased loaf pan (20cmx20cm).

11

Repeat the steps for all the dough parts.

12

Cover and let them rise for another hour.

13

Preheat your oven to 340°F (170°C).

14

Brush the surface with egg wash and bake the bread for 20 minutes in the preheated oven.

15

Once baked, brush the top with melted butter and allow the bread to cool on a wire rack before slicing.
