Its popularity has spread beyond borders, inspiring variations and adaptations worldwide, particularly in Eastern Europe.

Prep three 6-inch cake pans by buttering and flouring them, or using cake spray. Optionally, use parchment paper rounds for easy release.
In a large bowl, sift together 2 cups (240 grams) of all-purpose flour, 1/2 cup of cocoa powder, 3/4 teaspoon of salt, 1/2 teaspoon of baking powder, and 1/2 teaspoon of baking soda.
In a stand mixer, cream together 1 cup (226 grams) of unsalted butter and 1 1/2 cups (300 grams) of granulated sugar until light and fluffy.
Add 2 eggs and 2 egg yolks one at a time while mixing on medium speed.
Mix in 1 tablespoon of freshly brewed coffee.
Alternate adding the dry ingredients and 1 cup of buttermilk to the mixer, mixing on low until just combined.
Finish mixing by hand to ensure all ingredients are incorporated, achieving a thick batter consistency.
Divide the batter evenly among the three prepared cake pans.
Bake at 350°F for 25-30 minutes, until the center is springy and a skewer comes out clean.
Prepare the syrup by combining equal parts sugar and water in a saucepan. Optionally, add 1/2 cup of halved cherries and bring to a boil, then muddle to create a syrupy reduction.
After boiling, remove from heat and let cool. If using Kirsch, add it after boiling to retain the alcohol.
Once the cake layers are baked, check for doneness by ensuring the edges pull away from the pan and the center is springy. Tap the pans to help dislodge the cakes.
Let the cakes cool in the pans for a few minutes before inverting onto a wire rack to cool completely.
Once cool, soak each cake layer with the prepared syrup, allowing the cake to absorb it fully.
