Preheat the oven to 350°F.

Grease and flour two 8-inch cake pans.

Add 1 tsp of vinegar into 1 cup of milk and stir, then set aside to form sour milk.

Measure 1 and 3/4 cups of flour into a sifter over a large bowl along with 2 cups of sugar, 3/4 cup of cocoa powder, 1 tsp of baking powder, 2 tsp of baking soda, and 1/2 tsp of salt. Sift the dry ingredients into the bowl.

Break 2 eggs into another large bowl and add 1/2 cup of vegetable oil, 1 cup of cold strong brewed coffee, and 1 tsp of vanilla extract. Whisk the wet ingredients together, then mix in the sour milk.

Gradually beat in the dry ingredients, mixing just until incorporated.

Pour the batter into the prepared cake pans, dividing it equally.

Bake the cake layers in the preheated oven for about 30 minutes. To test for doneness, insert a toothpick into the center of a cake layer; if it comes out clean, the cakes are done.

Place the cakes on cooling racks and cool completely before removing from the pans.

To make the filling, pour 1 can of cherry pie filling into a medium bowl and add 1/2 cup of cherry liqueur, blending them together. Chill the cherry filling in the refrigerator.

Once the cake layers have cooled completely, place one layer on a cake plate and spread half of the chilled cherry filling over it.
