Mix 1 cup rolled oats, 1/4 cup mango puree, 1 tablespoon chia seeds, 1 cup milk, and 1 tablespoon sweetener in a medium mixing bowl.

Add 1/2 cup milk or greek yogurt and mix again until all ingredients are thoroughly combined. Cover the bowl with the lid and refrigerate for 6-8 hours or overnight.

Place a large mango on a chopping board. Peel the mango and cut it into cubes.

Before serving, add the 1/4 cup of mango puree to the oats mixture and mix well. It adds more freshness and tropical flavors to these oats. Now add 1/2 cup of freshly diced mangoes and mix well to combine. At this point, you can add more milk if your oats are too thick.

Divide 1/4 cup mango puree between 2 glasses or jars. Spoon overnight oats mixture evenly into both glasses. Top each glass with mango chunks, toasted coconut, sunflower seeds, and a drizzle of mango puree. Serve chilled.
