Chop fresh parsley and onion.

In a bowl, combine ground beef, chopped onions, and parsley.

Add 1 cup of pecorino romano cheese, salt to taste, black pepper, 1 cup of gluten free bread crumbs, and 3 cloves of minced garlic. Mix well. If the mix seems too dry, add some milk or water.

Add olive oil to a pan and fry one meatball to taste, adjusting seasonings if needed.
