2 pounds beef tripe
vinegar
lime

Clean 2 pounds of beef tripe thoroughly with vinegar and lime.

Add the cleaned tripe to a Dutch oven.

Add onions, garlic, bay leaves, salt, black pepper, Dominican oregano, smoked paprika, and enough water to cover the tripe.

Simmer for 2 hours, adding water as needed.

If using a pressure cooker, it will be faster.

Reserve 2 cups of the cooking liquid after removing the tripe.

In the same pot, add all the ingredients shown on the screen and mix them around.

Add the tripe cut into small pieces and mix again.

Add the 2 cups of reserved liquid and carrots.

Finish off with fresh lime juice and fresh cilantro.
