1 cup boiled chickpeas
salt to taste

Heat 2-3 tablespoons of oil in a pan until warm.

Add 1 teaspoon of cumin seeds to the oil.

Add 1 finely chopped onion and sauté until soft, about 2-3 minutes.

Add 2 finely chopped green chilies and 1 tablespoon of finely chopped ginger-garlic, sauté for 1 minute.

Add 1/2 finely chopped tomato and cook until soft, about 1-2 minutes.

Add 1/2 teaspoon of Kashmiri red chili powder and 1/2 teaspoon of Maggi masala, reduce heat to low to prevent burning.

Mix well, adding 1-2 tablespoons of water if spices start to burn.

Add 1 cup of boiled chickpeas and salt to taste, mix thoroughly.

Mash some of the chickpeas lightly with a spatula for binding, but do not mash all of them.

Turn off the heat and let the stuffing cool slightly.

Spread the chickpea stuffing on one side of a slice of multi-grain bread.

Optionally spread green chutney on the other slice of bread.

Place the second slice of bread on top of the stuffing.

Cook the sandwich in an electric sandwich maker until crispy, or on a pan.
