Cauliflower Tabbouleh

Take hot cauliflower rice out of the microwave and put it on a baking sheet to cool.

Put mint and fresh parsley in a food processor.

Zest one lemon and add its juice to the food processor.

Chop up three scallions (white and green parts) and add to the food processor along with one clove of garlic.

Add a little bit of salt and olive oil to the food processor and pulse until the herbs are finely chopped.

Add the cooled cauliflower rice to the herb mixture.

Chop up some cherry tomatoes and half an English cucumber and add to the mixture.

Add salt and pepper to taste.

Lastly, add a little crushed red pepper and give it a quick mix.
