How to Make: Cauliflower Tabbouleh

Cauliflower Tabbouleh
Quantities are estimated based on standard recipes for your convenience. The actual ingredients used in this video are accurate.
Remove the leaves and stem from the cauliflower and grate it using a food processor or a box grater until it resembles rice or couscous.
In a large mixing bowl, combine the grated cauliflower, diced cherry tomatoes, diced cucumber, and finely chopped red onion.
Add the chopped parsley and mint to the bowl and mix well.
In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to create the dressing.
Pour the dressing over the cauliflower mixture and toss until everything is well coated.
Taste and adjust seasoning if necessary, adding more salt or lemon juice as desired.
Let the tabbouleh sit for at least 15 minutes to allow the flavors to meld together.
Serve chilled or at room temperature as a refreshing salad.
