Jamaican Oxtails

Jamaican oxtails are a beloved dish that showcases the rich culinary heritage of Jamaica. Originating from the tradition of using every part of the animal, oxtails were once considered a humble cut of meat. Today, they are a symbol of comfort food, often served during family gatherings and special occasions. The dish is renowned for its deep, savory flavors and tender meat, often complemented by rice and peas. While variations exist globally, the Jamaican version remains a favorite, celebrated for its unique blend of spices and slow-cooked tenderness.

Clean oxtails with lemon juice and vinegar, trimming off excess fat.
Season oxtails with onion powder, garlic powder, salt, allspice, paprika, ground ginger, thyme leaves, all-purpose seasoning, Worcestershire sauce, and browning sauce.
Mix all seasonings together and marinate oxtails for at least 2 hours, ideally overnight.
Brown 3 tablespoons of dark brown sugar in a pot to make browning sauce (optional if using store-bought).
Brown the oxtails on all sides in the pot.
Add beef broth and mix in enough water to cover the top of the oxtails.
Add garlic, thyme, bell peppers, onions, and green onions to the pot.
Substitute habanero pepper for scotch bonnet pepper as it's unavailable.
Simmer oxtails for about 3 to 3.5 hours.
Add one can of butter beans and one crushed roma tomato during the last 30 to 40 minutes of cooking.
Stir and let the mixture reduce until oxtails are tender.
