Marinate pork kasim in oyster sauce, soy sauce, ground pepper, garlic powder, calamansi juice, and minced garlic for at least 30 minutes.
Heat oil in a skillet over medium-high heat until shimmering.
Remove pork from marinade and reserve marinade for later use.
Pan-fry pork slices in batches until browned, about 2-3 minutes per side.
Remove pork from skillet and set aside.
In the same skillet, sauté sliced white onions until translucent, about 3-4 minutes.
Add reserved marinade and bay leaves to the skillet; stir to combine.
Bring to a simmer and add white sugar; cook for 5 minutes.
Return the pork to the skillet and simmer for another 5-7 minutes until heated through.
