Season 1 kilo of ground beef with pepper and salt to taste.

Add 1 tablespoon of dried oregano, 1/2 cup of finely chopped onion, crushed 2 garlic cloves, 1/2 cup of finely chopped parsley, 1 egg, and 1/2 cup of breading to the meat.

Mix the ingredients with clean hands until well combined.

Form the mixture into meatballs about the size of 1 tablespoon and let them rest for 20 to 30 minutes.

Chop 50 gr of bell pepper, 50 gr of finely chopped onion, and 30 gr of celery, and chop some green olives and 2 large ripe tomatoes.

Heat enough oil in a non-stick frying pan over high heat, then lower to medium heat when adding the meatballs.

Cook the meatballs for about 6 to 7 minutes until fully cooked and remove them from the pan.

In the same pan, add 3 tablespoons of olive oil and fry the chopped onions, bell pepper, and celery until golden brown.

Add 2 cloves of garlic, the chopped olives, and 2 tablespoons of tomato paste, browning it slightly.

After browning, add the crushed tomatoes and cook for 3 minutes.

Pour in 1 cup of hot water, add 1 tablespoon of dried oregano, 1 tablespoon of Creole seasoning, pepper and salt to taste, and 1 tablespoon of vinegar, along with the chopped cilantro.

Incorporate all ingredients and reduce for approximately 2 minutes until thickened.

Add the meatballs back into the sauce to absorb the flavors.

Serve the stewed meatballs with rice and noodles.
