Sweet Potato and Lentil Dhal

1 lrg Sweet Potato
1 red onion
100g Red lentils
50g Spinach
2 tsp chilli flakes
1 ½ tsp turmeric
1 ½ tsp Cumin
1 ½ tsp Garam Masala
2 cubes of veg stock

Cube the sweet potato and roughly chop the onion.

Add to a hot pan with a little oil along with the spices and stir well.

Add the vegetable stock and the lentils, stir the ingredients together and simmer well for a good 10-15 mins, stirring occasionally throughout.

Once the potato has softened, add the spinach and stir until wilted.
