Boil 300 grams of green peas in water on high flame for 7-8 minutes until cooked.

Strain the peas and rinse with cold water to retain color.

In a grinding jar, add 1 cup fresh coriander, 5-6 garlic cloves, 1 inch piece of ginger, 3 green chilies, and 1/2 teaspoon black pepper. Grind coarsely without adding water.

Add the cooled peas to the grinding mixture and grind again, keeping it chunky.

In a bowl, mash 300 grams of feta cheese until smooth.

Combine the mashed feta with the ground pea mixture.

Add 1 teaspoon chaat masala and 1/2 teaspoon garam masala to the mixture. Do not add salt as feta and chaat masala are already salty.

Mix everything well using hands for better binding.

Add 1 tablespoon of roasted besan to the mixture for binding and mix again.

Take small portions of the mixture and shape them into cutlets.

Coat each cutlet in bread crumbs by rolling them gently.

Place the cutlets in the fridge for 10 minutes to set.

Heat 2 tablespoons of oil in a pan over medium heat.

Fry the cutlets on medium to low flame until crispy on both sides, flipping carefully as they are soft.

Once done, plate the cutlets and serve with green chutney or tomato ketchup.
