Blend onions, garlic, and ginger together until smooth.
Cook blended mixture in a pot until water dries up from the onions, garlic, and ginger.
Add 1/4 cup of olive oil or canola oil to the pot and let it simmer for about 10 minutes, stirring occasionally.
Once the mixture turns a greenish color and becomes fragrant, add the washed and chopped collard greens to the pot.
Stir the collard greens into the mixture until they reduce in volume, then cover and let cook for about 10 to 15 minutes, stirring occasionally.
Add salt and pepper to taste after the collard greens have cooked down.
Slice a medium jalapeno lengthwise and add it to the pot for spiciness, stirring for a bit.
Cook for another 10 minutes until the collard greens are ready to serve.
