1 tsp brown sugar
1 plantain (sliced)
1 avocado (sliced)

Preheat oven to 180ºC/Fan 160ºC/Gas Mark 4.

Place vegan sausages onto a preheated baking tray and cook in the centre of the oven for 15 minutes, turning occasionally.

Open ackee with can opener and strain to remove all juices.

Add 1 tbsp of olive oil to a frying pan on high heat; add onions, garlic, peppers, and sauté for 2 minutes.

Add ackee and simmer for 5-7 minutes.

Add black pepper, thyme, and paprika, then gently fold ackee over.

Cook baked beans on the stove for 5 minutes on medium heat, or microwave for 3-4 minutes. Season with black pepper, thyme, and paprika.

Wash and slice mushrooms, then set aside. Add 1 tbsp olive oil to the pan, then add mushrooms and season with salt, black pepper, thyme, and paprika; cook and simmer for 10 minutes.

In a mixing bowl, add 2 cups of self-raising flour, salt, sugar, and vegan butter; mix together and gradually add water.

Use your hands to knead to form a dough. Roll into a ball and let it sit for 10 minutes.

Roll dough into a circular shape and press your thumb in the middle. Shallow fry in vegetable oil on medium heat until golden brown.

Score plantain, peel open, and slice into thick long shapes. Shallow fry with vegetable oil until golden brown on each side.

Slice tomatoes and place on the oven grill until chargrilled.

Cut the avocado in half, remove the pit, and slice.
