Ingredients

  • 4 catfish fillets
  • 2 tbsp blackening seasoning
  • 2 tbsp olive oil

  • 1/2 cup heavy cream

Instructions

  1. 1Preheat a skillet over medium-high heat.
  2. 2Rub the catfish fillets with blackening seasoning on both sides.
  3. 3Add olive oil to the skillet and heat until shimmering.
  4. 4Place the catfish fillets in the skillet and cook for about 3-4 minutes on each side until blackened and cooked through.
  5. 5Remove the catfish from the skillet and set aside.
  6. 6In the same skillet, add the green bell pepper, onion, celery, and garlic. Sauté until the vegetables are soft, about 5 minutes.
  7. 7Add the diced tomatoes and cook for another 2 minutes.
  8. 8Stir in the heavy cream and bring to a simmer. Cook for 3-4 minutes until the sauce thickens slightly.

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper
  • 1/2 tsp black pepper
  • 1/2 tsp salt

Instructions

  1. 1Preheat your oven to 350°F (175°C).
  2. 2In a large skillet, cook the alligator sausage over medium heat until browned and cooked through, breaking it apart as it cooks.
  3. 3In a mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise until smooth.
  4. 4Add the cooked alligator sausage to the cream cheese mixture and stir to combine.
  5. 5Mix in the shredded cheddar cheese, green onions, parsley, garlic powder, onion powder, cayenne pepper, black pepper, and salt until well incorporated.
  6. 6Transfer the mixture to a baking dish and spread it evenly.
