1 shallot, minced
2 tablespoons white vinegar
1/4 cup water
1 tablespoon pickling spice
1/2 cup mayonnaise
1 lemon, juiced
1/4 cup pickle, chopped
1 tablespoon capers, chopped
1/4 cup flat leaf parsley, chopped
4 slices sharp cheddar
4 brioche buns

Season the cod with a light pinch of salt.

In a separate bowl, combine rice flour and potato starch, seasoning with salt, pepper, garlic powder, chili powder, smoked paprika, and curry powder.
