Cut the banana into about a quarter to half inch pieces.
In a large bowl, combine 1 cup of all-purpose flour, 1/3 cup of sugar, 1 teaspoon of baking powder, and 1 teaspoon of cinnamon.
Using a wooden spoon, mix the dry ingredients until thoroughly combined.
Add the banana pieces to the dry ingredients and stir to coat with flour.
In a separate bowl, add 1 large egg to 1/3 cup of milk and beat until well combined, about 30 to 60 seconds.
Add the egg and milk mixture to the dry ingredients and mix to form a loose batter similar to pancake batter.
Heat about one inch of canola oil in a deep fryer or large pot to 350ยฐF (175ยฐC).
Carefully drop heaping tablespoons of batter into the hot oil, cooking about four or five fritters at a time to maintain oil temperature.
Fry the fritters for about 1 to 2 minutes per side or until they are a deep golden brown.
Remove the cooked fritters to a platter lined with paper towels to absorb excess oil.
Allow the fritters to cool for 2 to 3 minutes before eating, as the interior will be very hot, especially the fruit.
Dust with powdered sugar if desired before serving.
