Soak 1 cup quinoa in 1.5 cups water with a little salt and lemon juice for half an hour.

In a pan, heat 1 tablespoon of oil and sauté 1 tablespoon of ginger and 2 green chilies until fragrant.

Grate 1 small carrot and add it to the pan.

Add salt to taste and the chopped spinach, cooking until the water evaporates.

Add 1.5 cups of cooked quinoa to the pan along with 1 teaspoon red chili powder, 0.5 teaspoon turmeric powder, 1 teaspoon salt, 1 teaspoon amchur powder, and 1 tablespoon chana dal powder.

Add 2-3 tablespoons of chopped coriander leaves and 0.5 capsicum, chopped.
