Combine 120 ml lukewarm milk and 40 g fresh yeast in a bowl; whisk until frothy.

Add about 180 g flour to the yeast mixture to obtain a porridge-like consistency; leave in a warm place for 1 hour.

In a separate bowl, whisk together 3 egg yolks, 1 whole egg, 65 g sugar, 1 sachet vanilla sugar, ½ tsp salt, zest of 1 lemon, and 3 tbsp rum.

Add the yeast mixture to the egg mixture and mix well.

Add 110 g softened butter and the remaining flour (about 320 g) to the mixture; knead with a dough hook for 5-7 minutes.

Let the dough rise in a warm place for 40 minutes until doubled in size.

Divide the dough into 12 pieces.

Add plum jam to the center of each piece and seal well.

Place the filled dough pieces seam side down in a greased baking dish.

Cover and let rise for 30 minutes in a very warm place (about 30°C / 85°F).

Brush the tops with melted butter.

Bake at 180°C (350°F) for 35-40 minutes until golden brown.

Remove from the oven and let cool for 5 minutes before dusting with icing sugar.
