Instructions
- 1Soak matar dal in water for 2-3 hours.
- 2Drain the soaked dal and rinse under cold water.
- 3Boil the dal in a pot with water until tender, about 20-25 minutes.
- 4In a separate pan, heat oil over medium heat.
- 5Add cumin seeds and let them splutter.
- 6Add chopped onions and sauté until golden brown.
- 7Stir in ginger, garlic, and green chili; cook for 2-3 minutes.
- 8Add chopped tomatoes and cook until soft, about 5 minutes.
- 9Mix in turmeric, coriander, and red chili powders; sauté for 1 minute.
- 10Add boiled dal to the spice mixture; stir to combine.
- 11Simmer for 5-10 minutes, adjusting water for desired consistency.
- 12Add garam masala and salt; mix well.
- 13In a separate pan, fry bori until golden and crispy.
- 14Serve dal hot, garnished with fresh coriander and accompanied by crispy bori.

- 8Once the pumpkin and potato are tender, add the green peas and mix well.
- 9Cook for an additional 5 minutes until the peas are heated through.
- 10Garnish with fresh coriander leaves before serving.
