Chop the onion (using red onion, but yellow onions are fine) into about 1 cup or so.

Put a frying pan on medium heat and add 2-3 tablespoons of vegetable oil to heat up.

Add the chopped onion to the pan and sautรฉ until it turns golden brown.

Wash the chicken livers and let them drain well, then pat dry with a paper towel to remove moisture.

Turn the heat to high and add the chicken livers to the sautรฉed onions, mixing them together.

Pour in about 1 tablespoon of brandy for flavor and sautรฉ for about 5-7 minutes until the livers are cooked through.

Add about 1/2 teaspoon of salt to the mixture and then remove it from the heat to let it cool.

Once cooled, transfer the liver mixture to a blender, including the oil and onions.

Add the 3 eggs (cut in half) to the blender with the liver mixture.

Blend until smooth, scraping down the sides as needed.

Add a splash of black pepper and more salt to taste, along with 1 tablespoon of olive oil for smoothness.
