Shrimp Scampi

1 lb shrimp, peeled and deveined
1/4 cup fresh parsley, chopped
2 tablespoons seasoned cubes
to taste salt
4 tablespoons unsalted butter
1 tablespoon parsley flakes
1 teaspoon ginger, minced
4 cloves garlic, minced
1/4 cup lemon juice
1/4 cup onion, diced
8 ounces linguine pasta
3 tablespoons extra virgin olive oil
1/2 cup cooking wine

Grate garlic and ginger, and set aside.

Chop onion and pepper, and squeeze lemon juice.

De-shell the shrimp, rinse, and pat dry with a paper towel.

Add one seasoning cube and a pinch of salt to the shrimp, and mix well.

Heat a pan and add butter until melted, then add the shrimp and cook until pink, about 1 minute on each side.

In a pot of boiling water, add salt and oil, then add linguine and cook for about 7 minutes.

Remove shrimp from the pan and set aside.

In the same pan, add olive oil, then garlic and ginger, and sautรฉ.

Add chopped onion and sautรฉ for about 1 minute.

Add chopped pepper and parsley flakes, and fry for another minute.

Pour in the cooking wine and cook down for about 10 minutes, allowing the alcohol to evaporate.

Add lemon juice and the cooked shrimp back into the pan.

Check on the spaghetti, drain the water, and toss it into the pot with the shrimp and sauce.

Mix everything well, and add fresh parsley, tossing again.

Let everything cook on low heat for about 1-2 minutes, then taste and adjust seasoning if necessary.
