Shrimp Scampi

1/4 teaspoon red pepper flakes
1 medium shallot, diced
4 cloves garlic, minced
1 pound large shrimp, peeled and deveined
1 lemon, juiced
1/2 cup chicken stock
3 tablespoons olive oil
1/4 cup fresh parsley, chopped
1/4 cup grated parmesan cheese
2 medium yellow squash, spiralized

Start by making zoodles with yellow squash using a spiralizer.

Heat a 12-inch cast iron skillet over medium heat and add butter.

Add red pepper flakes to the skillet.

Chop a shallot and add it to the skillet.

Smash garlic with the back of a knife, peel, and add to the skillet.

Add raw, deveined, and peeled shrimp to the skillet.

Juice a lemon and add about a quarter cup of lemon juice to the skillet.

Add about a quarter cup of chicken stock to the skillet.

Add lemon zest to the skillet.

Cook shrimp until they are opaque on each side, about 2-4 minutes.

Spiralize yellow squash into zoodles, pulling out the squash to prevent long noodles.
