Shrimp Scampi

1 lb whole shrimp
1 tbsp minced garlic
1 tsp red chilli flakes
3 tbsp butter
1 tbsp cooking oil
parsley for garnish
Salt as needed

1 tbsp apple cider vinegar

If using whole shrimp, peel, devein and clean them. Save the shrimp shells and heads in an airtight container to make stock.

Pat the shrimp dry and mix in 1/2 tsp salt.

Mince garlic, parsley and prepare the wine replacement.

On medium flame, heat 1 tbsp oil and 1 tbsp butter. Add the shrimp in a single layer and fry them until cooked through, about 1-4 minutes per side depending on the size of the shrimp.

Once the shrimp are cooked through, set them aside for later.

To the same pan add the minced garlic, chilli flakes and sautรฉ for 30 seconds.

Add the wine replacement and simmer until it's reduced by half.

Add 2 tbsp of cold butter and mix until it forms a smooth emulsion. If using unsalted butter, add salt as needed.

Add back the fried shrimp and mix until the shrimp is warmed. Don't cook for too long or the sauce will separate.

Garnish with parsley and serve with a side salad and some crusty bread.
