Haitian Chicken, or Poul Ak Sos, is a staple dish reflecting Haiti's rich culinary heritage, influenced by African, French, and Caribbean flavors. Traditionally, it's served during family gatherings and celebrations, symbolizing hospitality and community. Today, it has gained popularity beyond Haiti, with variations appearing in Caribbean restaurants and homes worldwide, showcasing the vibrant flavors of Haitian cuisine.

Add 1 cup apple cider vinegar, 3 halved limes, and 1 tablespoon salt to clean the chicken.
Clean the chicken by cutting the legs and removing fat.
Wash the chicken to remove vinegar and lime juice.
Wash the chicken a second time with lime against each piece.
Cut the tendons of the drumstick.
Pour boiling water over the chicken to disinfect it and let it sit for 5 minutes.
Remove the chicken from the hot water to begin the seasoning process.
Marinate the chicken with the seasoning ingredients for 30 minutes to 1 hour.
Heat 1 tablespoon olive oil and 1 teaspoon brown sugar in a pot for 2 minutes until dark color forms.
Add the marinated chicken to the pot.
Add 1 cup of water to cook the chicken and cover the pot; cook for 30 minutes.
After 30 minutes, add 2 tablespoons tomato paste to the pot.
Dilute the tomato paste with water to prevent sticking.
Add parsley, thyme, and cloves to the pot.
Add 1/2 green pepper and 1/2 red pepper to the pot.
Taste the sauce and add a sprinkle of salt if needed.
Add 1 sliced onion and let the chicken simmer for 10 minutes on low heat.
