Dahi Puri

1 cup semolina (sooji)
1/4 cup all-purpose flour (maida)
1/2 tsp baking soda
1/2 tsp salt
Water (as needed)
1 cup yogurt (dahi)
1/2 cup boiled and mashed potatoes
1/2 cup boiled chickpeas
1/4 cup chopped onions
1/4 cup chopped tomatoes
1/4 cup chopped coriander leaves
1 tsp chaat masala
1 tsp tamarind chutney
1 tsp green chutney
1/2 tsp red chili powder
1/2 tsp cumin powder

In a mixing bowl, combine semolina, all-purpose flour, baking soda, and salt.

Gradually add water to form a smooth dough. Cover and let it rest for 30 minutes.

After resting, knead the dough again and divide it into small balls.

Roll each ball into thin circles (puri) using a rolling pin.

Heat oil in a deep frying pan over medium heat.

Fry the puris until they puff up and turn golden brown. Remove and drain on paper towels.

In a separate bowl, mix yogurt, chaat masala, red chili powder, and cumin powder.

To assemble, make a small hole in the center of each puri and fill it with mashed potatoes, chickpeas, chopped onions, and tomatoes.

Drizzle the yogurt mixture over the filled puris and top with green chutney, tamarind chutney, and chopped coriander leaves.
