Heat olive oil in a pot over medium heat.
Add tomato sauce to the oil and stir for a few seconds.
Add 2 spoons of sofrito to the pot and mix well.
Add half a can of tomato sauce and mix again.
Add half a packet of cooked ham and stir to combine.
Add about a teaspoon of oregano and mix together.
Add a pinch of pink Himalayan salt and black pepper to taste.
Add the red beans and stir to mix everything together, bringing it back to a slight boil.
Add 1 cup of water and stir.
Add about 10 green olives to the stew and mix.
Add 2 tablespoons of chopped cilantro and mix again.
Bring the mixture back to a boil and then cover with a lid.
Let it cook for about 20 minutes with the lid on.
