In a bowl, combine 2 lbs of turkey, processed mushrooms, 2 tbsp garlic, 1 cup panko breadcrumbs, 2 eggs, zest and juice of 1 lemon, 2 tbsp Worcestershire sauce, red pepper flakes, and salt.

Mix the ingredients gently to avoid overmixing the meat.

Use an ice cream scoop to form meatballs, about 20 meatballs total.

Heat 2 tbsp avocado oil in a wide-bottomed pan over medium-high heat.

Brown the meatballs in shifts, cooking until they are brown on the outside.

Remove the meatballs and set aside. Add 1 chopped onion to the pan and sauté in the leftover fat for a couple of minutes.

Add 1.5 cups of rice and 3 cups of water to the pan, along with 2 tbsp Better Than Bouillon, and stir.
