1 Cup masa harina

1/2 lb leafy green (spinach, arugula, Kale or anything similar and in any combination)
Toasted sunflower seeds

Add minced scallions, both eggs, and most of the masa harina. Mix with a fork until well combined, achieving a texture similar to ground turkey.

Add ground turkey to the mixture, season with salt and sumac, and mix well with a fork to combine, whipping the meat for another minute or two.

Lightly oil a large baking sheet. Using an ice cream scoop, portion meat into balls onto the sheet pan, dipping the scoop in cold water to prevent sticking.
