Lower in calories and fat, or more budget-friendly.

Peel the garlic clove and mince it.

Add 3 tablespoons of red wine vinegar and 6 tablespoons of olive oil to a jar.

Add 1 teaspoon of oregano to the jar and shake well to combine.

Cut the feta cheese into small blocks or crumble it and set aside.

Cut the cucumber in half and scoop out the seeds, then dice it.

Slice half of the green bell pepper and add it to the bowl.

Cut 3 tomatoes into chunks and add them to the bowl.

Peel and slice the red onion into thin slices, then cut into quarter moons and add to the bowl.

Add the green olives to the bowl.

Pour the dressing over the vegetables and mix well to combine.

Serve the salad with feta cheese and capers on top as a garnish.
