Bosnian Syrup Biscuits Hurmašice

Break one egg into a bowl.

Add 50 grams of sugar to the egg and mix well with a kitchen mixer.

Add 50 grams of coconut flakes to the egg and sugar mixture.

Sift in 200 grams of all-purpose flour and 7 grams of baking powder.

Cut 125 grams of softened butter into small cubes and add to the mixture.

Work the mixture with your hands until you get a firm dough.

Knead the dough well until it is smooth and leave it aside.

To prepare the sugar syrup, put 300 grams of sugar and 200 ml of water in a pot and bring to a boil.

Once boiling, reduce to medium heat and let it simmer for 3 minutes.

Add 1 tablespoon of lemon juice to the syrup and let it simmer for another 3 minutes.

Remove the syrup from heat and let it cool off.

Take a small piece of dough and shape it into a finger-sized piece.

Press one side of the shaped dough onto a grater and place it into a pan.

Repeat until all dough is shaped and placed in the pan (no need to butter the pan).

Preheat the oven to 180 degrees Celsius.

Bake the cookies for approximately 15 minutes or until golden brown.

Once baked, pour the cooled syrup over the warm cookies.

Let the cookies cool off and soak in the syrup for a few hours before serving.
