Peel and dice the sweet potatoes.
Spread the diced sweet potatoes onto a sheet pan.
Drizzle about 2 tablespoons of olive oil over the sweet potatoes.
Toss the sweet potatoes in the olive oil to coat them well.
Season the sweet potatoes with salt and pepper to your liking.
Place the sheet pan in a preheated oven at 425°F (218°C) for 15 minutes.
Prepare the spice rub for the pork chops: mix 2 teaspoons of paprika, 1.5 teaspoons of chili powder, 2 teaspoons of dried thyme, 2 teaspoons of rosemary (optional), 1.5 teaspoons of garlic powder, 0.5 teaspoons of kosher salt (or pink Himalayan salt), and 0.25 teaspoons of black pepper.
Rub the spice mixture onto both sides of the pork chops and set them aside.
After 15 minutes, toss the sweet potatoes and add 2 diced medium-sized honey crisp apples to the pan with the sweet potatoes.
Push the sweet potatoes and apples to one side of the sheet pan and place the seasoned pork chops on the other side.
Return the sheet pan to the oven and cook for another 15-20 minutes until the pork chops reach an internal temperature of 145°F (63°C).
Check the pork chops with a meat thermometer to ensure they are done.
If necessary, return the sheet pan to the oven for an additional 5 minutes.
Remove the pork chops and sweet potatoes with apples from the oven and serve.
