1

In a bowl, add 2 tablespoons of sugar and melt it on high flame.

2

Once melted, lower the flame and cook until it turns light golden.

3

Add 3/4 cup of water (1/2 cup + 1/4 cup) to the caramel and cook until fully melted.

4

Pour the caramel water into a dish for the pudding base.

5

Dip toast or biscuits in the warm caramel water to soften them and layer them at the bottom of the dish.

6

For the praline, melt 3 tablespoons of sugar on high flame until it turns light golden.

7

Add 8-10 cashews and 8-10 almonds to the melted sugar and mix well.

8

Grease a plate with ghee and pour the praline mixture onto it before it sets.

9

Let the praline harden before breaking it into small pieces.

10

In a pan, add 1/4 cup of sugar and a small spoon of water, cooking until it turns light golden.

11

Add 1 tablespoon of butter and mix until melted, then add just under 1/2 cup of milk and mix well.

12

Bring the milk mixture to a simmer on low flame, then turn off the heat.

13

Break the praline into small pieces and transfer to a ziplock bag, then crush it with a rolling pin.

14

For the cream, take chilled non-dairy whipping cream and whip it on low speed, then increase the speed until it doubles in volume and holds its shape.

15

Add 1 tablespoon of the caramel sauce and 1/2 teaspoon of vanilla essence to the whipped cream and mix well.

16

Assemble the dessert by layering the soaked toast at the bottom, adding a spoon of caramel sauce, then the praline, followed by the whipped cream.

17

Spread the whipped cream evenly over the layers and decorate with remaining praline and caramel sauce.

18

Refrigerate for about an hour to set the cream before serving.
