Preheat the oven to 350°F (175°C).
Roll out the shortcrust pastry and line a tart pan with it.
Peel and slice the apples, then toss them with sugar, cinnamon, and lemon juice.
Arrange the apple slices evenly over the pastry base.
In a bowl, whisk together the eggs, heavy cream, and vanilla extract until smooth.
Sift in the flour, baking powder, and salt, then mix until well combined.
Pour the egg mixture over the apples in the tart pan.
Dot the top with small pieces of butter.
Bake in the preheated oven for 40-45 minutes, until the filling is set and the top is golden.
Remove from the oven and let cool for 10 minutes.
Dust the tart with powdered sugar before serving.
Serve warm or at room temperature with a drizzle of milk if desired.
