Authentic Sicilian Salmon: How to make Mediterranean Salmon with Olives & Capers

Slice up shallots and cherry tomatoes.
Add sliced shallots and cherry tomatoes to a bowl.
Heat a frying pan on high heat and add olive oil.
Season the salmon with salt and black pepper.
Place the salmon skin-side down in the hot pan and cook for about 3 minutes on each side.
While the salmon is cooking, add olive oil to another frying pan.
Add Getta olives and capers to the second pan and season with salt and black pepper.
Add Sicilian oregano to the second pan and mix well.
Check the salmon; it should have a nice color on the skin and be ready to flip.
After flipping, cook the salmon for another minute or two until done.
Once the salmon is cooked, plate it and top it with the Mediterranean mixture from the second pan.
